A composer who springs to mind is Steve Reich and his contrapuntal works. From a macro perspective they can sound quite similar, but once you get into the piece there's lots of new things to hear. But yeah, trying to make something completely different for each piece is something I've struggled with for years and it's only in the last 12 months that I've started to hone in on sound of my own.
