Red Red Wine was written by Neil Diamond, who's version is pretty decent, but I have always loved the Tony Tribe version. UB440 made it a song hated by many. I think Tribes version is soulful and sad even with the crazy little keyboard solo in the middle.

I love Leonard Cohens Bird on a Wire and loathe the Neville Brothers version.
almost anything done by Rod Stewart, or his more recent female incarnation - Sheryl Crow. I don't know if either of them ever wrote their own music.
Sheryl Crow destroyed Cat Stevens' First Cut is the Deepest, and many, many more. I'll probably get banned for life from hubski for saying this... but a cover I liked better than the original was The Sundays cover of Wild Horses:

When I was younger, the Bee Gees butchered a bunch of Beatles songs. Never forgave them. Particularly, Robin Gibbs and "Oh Darling".

Rod has a lot of explaining to do. The guy had the audacity to cover Dylan's Forever young and rewrite the lyrics. What a dick. Barf indeed.
I can only think of improvements. Some of my favorite songs are "Romeo and Juliet", Indigo Girls version (much better than the Dire Straits original), Janis Joplin's version of "Bobby McGee" (much better than Chris Kristofferson's, though I sing his lyrics when I play it on guitar), Manfred Mann's "Blinded by the Light" (Sorry Bruce Springsteen), and Katakowski's "What is Love?" with Anna Naylor singing "Beat me, Daddy!" in the background.
It's a good exercise, though, I'll think further...
