I stumbled upon a recipe for pancakes with just eggs and banana. As my four year old daughter loves pancakes, but eats more than enough wheat, I thought I'd give it a shot. I modified it with the addition of walnuts and vanilla extract.
The ingredients: one banana, two eggs, a small handful of walnuts, and a teaspoon of vanilla extract.
Blend it.
Pour it in a buttered pan.
It's amazing how much it looks like a pancake.
Mickey Mouse helps sell it.
Paired well with b_b's homemade bacon.
My daughter and wife love them. They are delicious, are very pancake-like, and require very little maple syrup as the banana makes them sweet.

Just made them mk. I didn't have walnuts but only cashews. Cashews are more butter like when crushed so it was not quite like mk's. They weren't as fluffy, but they were damn good. KB - You are right that the ingredients would be more omelet like but the taste and consistency is definitely more pancake than omelet. Thanks mk, I will definitely be making this regularly.
You can use about 1/8th of a teaspoon of baking powder per ~100ml of batter to 'cheat' and make them a bit fluffier. I had no nuts to use for the recipe but it worked quite well on Nutella + flour instead. I'm still trying to grok the recipe, since I don't really like walnuts.
Let me see if I can dig out a paleo key lime pie recipe I made a friend for her birthday. It's one of those things that takes far more effort than usual and I still can't be sure it tasted so good because it did or because we didn't believe it could.
GF pancakes are mostly straight forward, but maybe like 1% tricky. I usually use the same flour:milk ratio that I would for non-GF pancakes, but then I cut with a little bit of water. The GF flour gets a little thick and gloppy after a minute or so in liquid. It's best to add a little bit of water at a time until it loosens up again. Doesn't take much. If you're not used to the GF cooking thing, ask anything. I cook a lot, and it's basically been 100% GF for the last couple years. I'm no expert, but I've learned a couple things along the way.
I tried to make these once and it just ended up mushy and not like batter at all. Tips??
There are very few ways I enjoy spending a weekend more than working the smoker. Bacon if course required the extra step of cutting before smoking, but it's not difficult. Homemade bacon is something else. I love it. Probably too salty for some people's taste.

I make these all the time, they're so good. I recommend mixing in some spices like cinnamon or nutmet before cooking. These are also great with blueberries. Another thing that's tasty is to slice another banana and eat it along with the pancakes. I know it's just more banana but it really fills out the flavour.
