In the vein of trying something new every day I decided to make tofu-nuggets instead of buying store bought chicken nuggets for my daughter. This satisfies three things: 1. my wife is a vegetarian so she gets to eat them 2. My daughter loves "nuggets" so she's happy and 3. I get to try something new.
Below are two photos. The first is of the ingredients used and the second the finished product.
Ingredients: all to be added to mixing bowl except tofu and bread crumbs
1. Extra Firm Tofu
2. Mustard
3. Soy Sauce
4. Sriracha
5. Rice Wine Vinegar
6. Italian Bread Crumbs
7. Egg Whites
8. Maple Syrup
Directions: I have no idea the proportions of these things. Just keep tasting it as you go and add the eggs to the mixing bowl last.
Mix together marinade. Let the cubed tofu sit in the marinade for at least an hour. Pull the tofu from the marinade and add the egg white. Whisk it in. Then dip the tofu in the marinade and roll in in the bread crumbs. Don't get too crazy with the bread crumbs, I probably put too much on.
Put in the oven and bake for 30 minutes at 400.
They're pretty tasty, but they are missing something....? I think it's sweet and sour sauce from McDonalds.

They were pretty good, but I would certainly use less breading next time. Plus, like any "nugget" they're as good as thd dipping sauce you use. After I tried one, it occurred to me that a tofu parmigiana would be a fun dish to make. I think I may try that next. Glad you enjoyed the links, thank you for the comment.
