I'm having a hard time understanding this. The article is saying that the fluid will be staying in a constant loop with itself and won't untie itself, like a physical tie? Because, if so, that's pretty damn cool.

In an ideal fluid, yes. These knots eventually dissipate, and they don't know whether the knot remains but is too diffuse to see or comes untied yet. They've shown that a knot can be made in a real fluid, but not much beyond that.
