The real reason for two floppies, back in the day was it made it SOOO much easier to copy a floppy (which you HAD to do, they were unreliable and backups were needed). With two - source in one, blank in the other, start the copy, go get coffee, done. With one - insert source disk, start copy; about half fits in memory typically; when computer says to, extract source disk, insert blank. Wait. Remove blank, insert source. Wait. Remove source, insert blank. Wait. Done. PITA.
