I have never gone whale-watching, and I know that I must. I imagine your brain explodes with activity as a 50ft whale breaches in front of you.

If you're looking for sheer brain activity, I think nothing beats encountering a large predator close up. There are a few options for diving tours with basking sharks, which are quite gentle but still terrifying to your monkey brain.
