Ha bread and broccoli for a healthy meal. Bagels had good crust but they over rose. Recipe called for 2tbsp of malt syrup but I only had sugar cane syrup this resulted in bagels that are too light and puffy and not chewy enough. Might try using a high gravity beer next time though it hard to guess how much would be equivalent it’s way more math than I want to do to back calculate volume of beer per 2tbsp of extract and post ferment it unclear how much remains available.
