Looks good! I am a bit concerned about the "highly perishable" part though. My lunch sits in my car in a lunch box, so I wonder if it would survive. I can't afford to get the runs on the job.

It will survive. I've taken it on summer picnics, it's a trooper. Great with jams or mustard so you can go sweet or savory with it.

Playing Tennis tonight and I guess I know what I'm eating after.

Nice. I like brie with ham and jam or brie with olives and ham. If this is like a more intense brie, those should probably work with it too.

I really like a brie/pear/walnut combination on a ciabatta bread. I tried it at a coffee shop a couple of years ago and have been hooked ever since. It's also very easy to do, no need to pre-cook or grill anything.
