I have never cooked like this but I wonder if you have thought of doing a whole animal? If you like lamb you might consider trying a whole roasted goat. There is a Moroccan place in town that serves a whole roast goat dinner, you need 10-12 people to eat the thing but it's pretty magnificent. Goat is a lot like lamb, maybe a bit gamier, try a butcher in an area of town with a large foreign population (Mexicans or middle easterners). Would be quite a project but maybe you might consider it.
