I'd say Seven Samurai is a good place to start. It's a long but rewarding film. Yojimbo is quite good. Ran and Kagemushu are more modern and great bloody rhomps.

His stories that are placed in a modern setting can feel a little slow and culturally inaccessible but I think that if you've watched a few of his historical pieces they become easier to enjoy.

Tell me what you think if you watch one. I've probably watched more Asian samurai and war epics in the last year than any other genera.
