I know what you mean. There are a lot of common foods missing in this graph. I don't know if it's because they ended up in the far right of the graph or if they weren't included in the stats.

My assumption is that vegetables and pulses would be far to right as it makes sense that feeding plants to animals in order to produce animal products would use more water than eating the plants directly.

I also found this foods carbon footprint graph, which further reinforces the higher environmental impact of animal products.
